Cooked and turned through a heavy garlic sauce while still hot, so the shells reach you coated and the meat underneath stays sweet. These carry their flavour in the head and the claw, and the tail gives a clean, firm bite that pulls away from the shell in one piece. The sauce clings instead of pooling, which means every shell comes out of the pack dressed. Serve them straight from the bowl with the sauce spooned over the top, and keep rice or bread close by for everything left at the bottom. They need no more than reheating, so a few minutes in a covered pan is enough to bring them back to serving temperature. The pack holds enough for a table to share, and the sauce is best spooned back over the shells as they come out of the pan.
