Slice it for sashimi and sushi, sear it briefly on both sides and keep the centre rare, or cube it for a quick sear with sesame and soy. Keep it cold until the last moment, use a sharp knife, and let the slices come up slightly before serving so the fat opens out. Keep the blocks wrapped in the coldest part of the freezer and slice only what you need, so the rest stays in condition for the next meal.
